Kinda off topic: For a podcast, where the editing steps like taking out mouth/breathing noises/retakes isn’t necessary, you should be able to master to your “target sound” with a fairly static post-processing chain of compression -> normalization -> EQ. Editing out long pauses does take more effort (and should be done prior to mastering), but it should go pretty quickly with experience (since you can see pauses in the waveforms). If you want to go crazy, bring a dog training clicker to the studio and mark the things you want to cut out with it. It makes a very distinctive waveform. Back on topic: This was a fun listen.
