if only emulsification could happen before the freeze, that would allow some wild culinary creations. Using an oil based food coloring would be good for your on camera test to show how much and how deep the oil goes

Anything that would make a boundary between it and water. So yes I think oil droplets should do it. This is something I'd like to test though.

does it have to be air? Would a thin oil also cause it?
