Secondly, I have and use my egg piercer. It looks slightly different. You gently press the egg down (fat end facing down) on the piercer until it moves the protective cover past the sharp needle sticking up to pierce the egg shell. I can see the air escaping from the hole when they're cooking.

The right size*

That press is a bit dodgy, but it could work. It just takes a bit of practice and a plastic film (I use a cut up ziploc) to make the tortillas. And then waiting the right amount of time (a few seconds) after pressing to get the dough the right things and not have it spring back into a small circle…. Anyway, if I’m only making a few tortillas, and doing them with the right masa (look into the El Salvador pupusa) I just flatten and form them with my hands. Faster and no gadget needed.

Colombian moms (I’m one) also do this. It is key in making empanadas and getting the exact thinness needed to achieve the right ratio of guizo to masa. We use a specific white corn meal mixed with the liquid that comes out of the pork to make the tortilla.
