Just a bit of cooking info. All-beef is fine but a beef and pork combo meatloaf will be juicer. A common complaint about meat loaf it's that it is too dry. Oats instead of bread crumbs will help a meatloaf stick together but you'll need to grind the oats to a bread crumb-like texture. With all the fresh ingredients you used you've made a meatloaf which is actually superior to the typical American meatloaf. Great job, mom!

Absolutely, you can substitute brown gravy for the glaze. Or, the tomato glaze with slices of American cheese on top. It's a fairly versatile dish, so add or omit any ingredients you like. I usually dice the onions smaller and add diced celery, Worcestershire sauce, and a little grated carrot. Sometimes I'll add dry onion soup mix. Have fun with it! Oh, and also, don't be afraid to squeeze the meat mixture while you're mixing! Get all the ingredients incorporated. That will be a fun project with Archie when he is around 3 or 4 years old. Kids love to get their hands into things!

Yum! Meatloaf sandwiches all this week!

Put some salt in a small bowl or ramaken, and place it near your onion as you chop. The salt will absorb the "fumes" from the onion. You can then rub your fingers on stainless steel to remove the onion juice and the smell.
