Corn flour is not corn meal. The substitution won't be a disaster but it will not have the texture you remember and it will have much less flavor. If you can't find corn meal use polenta. Polenta is the same as corn meal only a bit more coarsely ground. Make sure the sausage surfaces are dry so the batter sticks. Most important: Have fun. Great job, well done.

As mentioned somewhere in the youtube comments, what you call corn flour may be what we call corn starch in the US. see https://www.hollandandbarrett.com/the-health-hub/food-drink/food/all-you-need-to-know-about-cornflour/ I have no idea if you even have what we call corn flour, which is finely ground corn meal
