They didn't say Angel had caught feelings for her, they simply said he "liked" her, and that bc of his curse, he didn't want to take a job where he'd be very close to her almost at all times; meaning he couldn't afford to take the risk to develop feelings for her. I think that's perfectly understandable and reasonable.

Everyone, including some people in the show, talk about it as if the sex act is what changed Angel to Angelus. If you think about the relevant Buffy episode, Angel didn't change into Angelus during sex. It happened when the two of them were relaxing and snuggling after the sex. The "moment of happiness" was a misdirect. The emergence of Angelus in this episode kind of broke that, so I've always taken it that the drug he was given was a very powerful plotidium.
