coming from a chef, yes it absolutely is. kind of cut throat too had another restaurant owner come to my table and after the meal he tried to have me work for him instead. I was working at a Japanese place at the time, and he ran a Mexican Italian fusion place. but that's honestly the more timid side of the industry here in the states it gets wild in Italy, France, or Japan

I love that Danny talks about how Soma is too cocky and needs to be taken down, when that's the actual premise of the show. It's not that Soma isn't an amazing cook, it's that he can't evolve as a cook if he keeps thinking he's so great.

They said the "fragrance" or "notes"of allspice is a combination of the spices they said. It's basically a description of what allspice tastes and smells like rather then just combining those ingredients to create it

The blend they refer to is basically the default substitution for actual allspice, so maybe the substitute blend is more common than actual allspice berries in Japan?

Ok, the in show explanation of allspice made me stop the video, either they just got it wrong or there’s a translation error, because I work with whole allspice berries at work every day as a pastry chef, and that ain’t no blend of spices, that’s a whole actual spice on its own. Now I’m just gonna brood about this all night🤣
