So about the star thing, it's a joke that doesn't really translate to English lol. Star in Japanese is "Hoshi" but 3 stars is pronounced "mitsu boshi". This sounds the same as what a pickled plum (the red things) are called which is "ume boshi" so Souma was thinking maybe Chef Shinomiya was referring to three pickled plums instead of stars.

I mean, Soma's dad only went away after sending Souma to culinary school. He was actually there for most of Souma's life. That was the point of Isshiki telling his backstory, that he stopped traveling arround and only recently got back to it. So it's less a case of "I don't put effort on this kid" and more of "Welp, my son is all grown up, time to throw him out from the nest so he can learn to fly". The "Carnage" nickname is a case of awkward translation, since his actual nickname "Shura" is an untranslatable cultural/religious reference.
