@Megan Barhorst really nailed it. In Season 4, Amethyst and Steven put Jasper in the bubble - and she stayed there. She poofed Amethyst, which caused Ame to take an emotional back seat to Jasper's situation, even though she still longed for knowledge of Homeworld. However, at the start of Season 5, Steven began to Geas Jasper using his powers. Amethyst is, if nothing else, a creature driven by emotions. She reacts strongly to anything that impacts her - or anything that SEEMS like it might impact her. She is indeed incredibly skeptical of Steven's use of his power. She feels more sympathy towards Jasper now that she's even less of a threat, and those emotions compile into what we have here.

I kinda hope that if they help Jasper and become friends, they just leave her alone as friends instead of forcing her to do activities with them

Before, Jasper was a near stranger without any sympathetic qualities. Now they have more exposure to each other, during which Jasper's been dealing with a level of coercion Amethyst finds uncomfortable and wrong. So Amethyst's sympathy has increased. Seems a natural change to me.

I find it a little weird that Amethyst seems to care for Jasper, considering that in the previous season, she didn't have any problem of leaving her behind when the Cluster was about to emerge

If this goes anyway like it did in canon this is going to be very one sided in favor of jasper. Maybe if Amethyst got creative with her powers and used tricks like flight they might stand a chance but I doubt that’s going to happen. Gems have such awesome powers yet most of the time in canon they’re written like they don’t have them. Holo pearls, shapeshifting, that cool plasma blast pearl used one time against bismuth and then never again, garnet’s electric powers, future vision, making water constructs that consist of more than just chains and hands so many powers yet so much squandered potential.
