HP3 uses Time Travel in a way that makes it seem not to be trifled with. They did figure out it has an inevitability in the casting of the Patronus. Many rare examples of magic were either too dangerous, could be tampered with, or could create sad situations. They couldn’t really go back and save anyone unless the reveal had been that the events shown before the saving moment was a fake tragedy. Time travel stuff can set all that up. HP didn’t want to after the hippogryph.
