You can obtain the key and enter the gallery room in just one day. As long as you don't save the game on the evening of 26, you should be fine

I'm currently at day 26 and barely have enough time to get pass the operation. Will that means I have to restart the whole game? I've lost once and the game rolled me back to day 25 but still haven't got a clue to finish this.

It's all about exploration, many peoples in the areas will give you a little clues on where to find key items. The goal is to enter the gallery room, you'll need a key for that, and there's many way to obtain that key.

Is there any hints to play the new part of the story in the new update?

Normally, you can load your old save file in new version of the game, I made sure that it's the case. But if that's not working, that means there is a problem, in that case you have to start a new game.
