I really hope everybody gets a chance to try this recipe because it is really tasty! I have already received a few requests for different types of corn side dishes, so I will definitely be circling back around to play around with different flavors.
One particular recipe I will be trying is some sort of Mexican street corn (elote) bowl! What are some other types of corn variations you'd like to see?
This side dish will eventually be posted on TikTok, so feel free to go ahead and share the recipe and ingredients on your social media or in the FB group if you want.
The timing of this recipe is pretty good because I think it would go great with the Chicken Fajita Casserole that I posted yesterday.

So I was right in the middle of making this and realized I didn't have sour cream π¬. I took a gamble and used some cottage cheese, turned out pretty tasty.
I made this for the first time today and itβs going to be a staple! Wow. Simple ingredients for something amazing. I grated smoked cheddar instead of Monterey Jack and it was outstanding.

Absolutely. You may just need to cook a little longer or thaw beforehand.
Can I use frozen corn? We don't usually buy canned veggies

Canβt wait to try this one! Now that spring and summer is quickly approaching us, can we get some recipes for on the grill or Blackstone? We primarily cook outside in the summer rather than on the stove/in the oven.
What did I do wrong here? I bought a block of Monterrey Jack and shredded it, and I had weird clumps of cheese. I followed the recipe to the letter. It still tasted okay, but the clumps were weird
