I made a big woodworking bench from a piece of 3" X 3' X 6' maple laminate that had been a commercial kitchen work table. As the top was well worn I flipped it over and used the underside. It's still doing well 35 yrs. later.

LOL - I cringed when you (facetiously, I hope) suggested running your benchtop through a planer. You do realize that most of those dark flecks represent a tiny bit of steel embedded just below the surface of the wood.

Yah, I'm sure that, if this is really stainless, it's some very mediocre grade like 303. Or maybe it's just plated or something. Who knows.

"Stainless" rusts quite readily under the right (wrong) conditions. It depends on a very thin layer of atoms on the surface of the metal which. can be disturbed by a number of factors, including electrolysis (by contact with other metals), chemical (particularly acids as might be found in paper). 316 is pretty good, but SS in the 30x series is only barely rust resistant.
