I think Miranda Stoddard has the right idea with putting aside a fixed percent each month for these extra donations, and rolling any excess you have into the next month or quarter. If you have a big surplus at the end of the year you could do something special with it and talk about it in the report.

I think a simple message about you used it for assistance would be fine. I think most of us trust that you are gonna use the money to help your community in some way.

I think it would be cool to have an emergency fund that's 20% of the money coming in (or whatever you think is the right ratio, not a thing I know about). Then just post the percentage being used for that here.
