It's not impossible, there's just no way for a normal human to generate the spin and force necessary to make a bullet curve on their own. However her bullets and rifle aren't normal, she can control the power and spin of the bullet by altering it's shape, something that would be totally impractical, but not impossible to attempt in real life

5:49 - She can't control the bullet once its fired. Think of it like football (soccer), you can kick curving shots, but you have to kick the ball a specific way to do it, you can't control the ball once your body no longer touches it. I think the explanation that Snipe gave was basically that she is just THAT good that she knows what kind of bullet shape to use and how to shoot it to make it go exactly where she wants it to. Kinda like Bullseye from Daredevil.

Technically speaking all bullets curve downward but as for sideways thats impossible. Once it leaves the barrel its at the influence of gravity and inertia and gravity only goes down.
