Regarding Swiss: Part of the reason Hayes and Carl may not like Swiss cheese and feel that it tastes like nothing is that according to USDA guidelines, it isn’t really required to taste like anything. The differences in flavor, body, and texture between Grade A, B and C Swiss (aka Emmentaler) cheese are stark. From the Grade C flavor standards: “The cheese may possess the following flavors to a slight degree: barny, fruity, metallic, old milk, onion, rancid, sour, weedy, whey-taint, and yeasty; and the following to a definite degree: acid, bitter, feed, flat and utensil.” https://www.ams.usda.gov/grades-standards/swiss-cheese-emmentaler-cheese-grades-and-standards Compounding this is a different set of USDA standards for domestic cheeses manufactured in bulk, with the highest standard being US Extra Grade (“Shall be pleasing and characteristic of the variety and type of cheese”) and the lowest standard being US Commercial Grade (“May possess certain flavor defects to specified degrees”) https://www.ams.usda.gov/sites/default/files/media/BulkAmericanCheeseStandard.pdf Taken together, this means not much is required of the cheap, mass manufactured Swiss/Emmentaler style cheeses you’ll be served in US chain restaurants beyond being white-to-light-yellow in color and having eyes (aka them holes). Q: “Why does he know this?” A: I fell into a rabbit hole after buying a surprisingly cheap hunk of gruyere (my wife’s favorite cheese) last year and being disappointed that it tasted like waxy nothing. We found the linked case wherein the fourth circuit U.S. Court of Appeals upheld a Patent and Trademark Office decision to reject "Gruyere" as a registered certification mark, which would have required any cheese labeled as such to be made in the Gruyère region of Switzerland or France. The rejection made gruyere a generic term, leaving the only requirements (who is enforcing these standards anyway?) being a mild flavor, small holes, and at least 90 days of aging.
