I think he was describing the shape that the pasta comes in and not the shape of the individual pieces. So something like fettuccine nests (a theory you mentioned in the episode), angel hair nests (Anneka's theory above), or tagliatelle (my theory). My reasoning is that he was trying to make pasta that you can eat one-handed: a nest pasta comes in its own convenient bun-line configuration that you can grab one-handed. After the generous application of sugar and breadcrumbs, of course.
