On the streak-cutting thing, if I remember right, steak is supposed to be cut against the grain or else the meat will be tougher to chew. Sometimes after it's cooked it's hard to see what direction the grain goes. So if someone cuts a steak for you it can be because they want to save you the trouble of cutting it wrong. I've seen chefs do it often.
