Higher pin numbers allow more options, but three is all that is required.

Because the bottom rail is at -0.6V.

Confusing little device. If the top rail is at 5V-0.6V, how is that greater than 4.7V?

What’s the advantage over the typical 5 or 6 pin arrangement? It’s certainly very clever and I guess it saves a few pennies on packaging but the overall part count isn’t any less than usual so is it actually cheaper?
