🕑 Added 2020-11-05 14:01:01 +0000 UTC- 1 pound ground beef chuck
- ½ onion chopped
- 5 garlic cloves, minced
- 1/4 teaspoon dried thyme, sage and rosemary each
- 2 tablespoons Worcestershire
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup Beef broth
- 20oz frozen mixed vegetables (no need to thaw)
- Coarse salt and ground pepper
- 2-3 cups mashed potatoes (prepared)
Make the mashed potatoes. Brown the beef with onion and garlic, then drain. Add spices and frozen veggies and cook for 2-3 min. In a separate skillet, melt butter, add flour, then wisk in Worcestershire and beef broth. Cook until it thickens and then add to beef mixture. Put beef and veggies into a pan, top with mashed potatoes and broil until mashed potatoes are slightly brown.

I do this a fair amount, with a few variations: 1. Crumble 1 or 2 bay leaves in the ground meat. 2. Make sure there’s plenty of sweet red pepper in the vegetables. 3. Sprinkle some shredded cheddar cheese over the top of the mashed potato crust.
