Doctor Who has 2 distinct era's. You've got classic running from '63 to '89 (plus a TV movie in '96). And the modern era running from '05 onwards, with a new series coming this year. When I say distinct I mean both are part of the same canon but there's a significant event that happened in the "wilderness years" (when the show was off the aire) that creates a hard separation between the two era's

If u did start doctor who then start in 2005, no point in watching the original which ended in 1989, it has it's time but to old slow basically 0 budget and the 2005 reboot starts assuming you hadn't seen the original. Saying all this theres still other shows would recommend first
