I totally agree about Speyburn being pedestrian, Hunter Laing have done several Sherry matured single casks as part of their old malt cask range, they’re very clean Sherry bombs with no resistance from the distillate.
Listening to your wood suggestions to Speyburn, I remind me that a few days ago I found myself wondering about port matured or finished single malts. I think it’s getting harder to find it.
