Tabata definitely did not direct the whole anime canon himself. He was even pissed off when the director of the anime put in a plot hole regarding Leo in the dungeon "anime canon" episode. Tabata might have had a say in a few things to help guide the anime but not too much. Also, a lot of these episodes are not even worthy to be in the manga in the first place, they are fun and all but don't fit in with the manga.

Anime cannon is basically where the mangaka wanted to put it in the story but didn't have time to put it into the manga. Tabata skipped the 6 months between the trial and the next arc because the anime caught up to the manga so he skipped it to make time. Also Tabata basically directed all of the anime cannon himself so it is definitely a part of the story

Anime canon is basically canon but just isnt shown in the manga. It can affect the later canon episodes 100%
