OH! Wait. I DO remember those side stories in the back! I remember the panel of Happy fishing for the flying fish now in the back of one of the books! It’s been so long since I’ve actually read the manga I forgot about those being in the back lmao. Oops 😅 And I have no freaking clue why I forgot! I know damn well the creators like to stick stuff back there a lot so I have no clue why I blanked on that! I remember the back stuff in FMA a lot more….

A lot of those chapters are included in the back of the physical volumes of Fairy Tail. There's also a bunch that were collected in some volumes called Fairy Tail S. The Fairy Tail Wiki does a good job differentiating the anime episodes. They have the episodes color coded for which ones are based off regular chapters, which ones are based off omake chapters, and which are pure filler.

Due to "Old Man" being off and has been off for a while, I can see Laxus stating that he's the strongest at the guild because of that.

Oh really? I was always told it was filler, and believing it since I’ve read the majority of the manga. I haven’t even heard of other stuff aside from what’s in the manga

So the scene where they talk about the strongest wizard in Fairy Tail is slightly changed in the anime from the manga. The manga actually mentions a person that is stronger than Laxus, Erza, and Mystogan. This character is only referred to as "That Old Man". So there is somebody that is above them. The anime didn't include this because they weren't sure how long they were going to keep going so they didn't want to add anything in that might confuse people.

Not really. This is actually adapted from some omake chapters that Hiro Mashima had written. So while it wasn't based off of a numbered chapter of Fairy Tail, it's still based off of a canon chapter written by the mangaka. This is a major reason why so many of Fairy Tail's "filler" episodes are so good.
