It's not the smell (though I imagine that would be pretty overwhelming, too). When onions are damaged, they produce sulfur compounds that react with the water in your eyes to produce small amounts of sulfuric acid. Even if you can't smell anything, your eyes are going to try to flush that out.

I always thought putting onions in water would reduce the amount chemicals released but, no 🧅
I've heard that most of the crying from onions is caused by dull knives crushing the cells rather than slicing them. Try sharpening your knives! Also chilled onions cut easier. So leave them in the fridge for a bit before cutting? *shrug*

This, bizarrely, reminds me of a Hyper Police audio comedy sketch on the second soundtrack album. You know, the really obscure 1997 furry anime series and the soundtracks only released in Japan (or bootleg Taiwanese CDs)? Yeah, deep cut. Anyway, there was a bit about Natsuki (the catgirl) countering the crying from onions by laughing. Good times.
