LaTeX would be an example of "fancy software" for word processing. LaTeX acolytes always say "It gives you more control." That's why they use it... All the annoying shit that Word just does for you automatically because 99% of people don't need to adjust those settings... On LaTeX you can control it. So there you go. Useless information!

Who gives a fuck what software you use to write? It's WRITING you idiot. I'm surprised he didn't just say notepad. Anything that accepts text is fine. Who is using this hypothetical "fancy" software he's referring to? "New version's of word are too fancy. I use one from 16 years ago." First of all, I doubt you know how to even navigate any slight change that's occurred in the past 16 years. Secondly, you just said it doesn't fucking matter. So what is stopping you from using the current office? You're too cheap / stupid to be able to acquire it?
