The bigger mess up is that most of the steps are reversible, except for the last one. I forgot to change the arrows :S

We are working under basic conditions here and the likelihood of getting the alcohol protonated is pretty low. The hydroxyl leaving seems to be the accepted mechanism (as far as I can tell), but you are right to believe that normally water would be the leaving group.

I thought on the straw pole the vote was to extract citric acid from lemons, not vitamin c. But either way would look forward to either video
In one step if the synthesis I think that the OH group should be protonated and then leave as water
