In this video I give a little talk about my experience getting a set of EMG tests on my arms and hands with photos and a basic description of the processes involved. Enjoy!

To elaborate on the speed component: In the graphics of the nerves, the structures labeled Schwann Cells are specialized cells that wrap around long nerves many times, acting as an insulator. When they are in place, they dramatically increase the speed at which the electrical impulses travel through the nerves. There are diseases that affect the Schwann cells, called demyelinating disorders. When the insulative properties are reduced or destroyed and the transmission speed drops it causes Bad Things to happen.

The lack of information on voltages used are likely an indication that they are not a controlled variable. The voltage required to obtain a particular current will depend on skin resistance which varies a lot, not just from individual to individual, but on temperature, humidity and recent effort.

I had the same EMG tests some 20 years ago but instead of the 2-pronged probe, small needles were thrust very shallowly under my skin. Didn't hurt at all but the shocks were pretty unexpected! Not that unpleasant considering the massive jolts I've received during my 50+ years of hamming!

It may be more useful to approach this from the TENS/EMS muscle stimulation perspective, where many more products exist and thus more readily accessible documentation.
