Usually I start with about 4000 pixels on the short side of the image - enough to paint details, and most of the time this stays the way until the end. For some pieces with a bit more fine detail, I may tune it up to 5000 or even more (short side) to do a bit of touching up. There isn't a magic number, just go with one that you feel has enough room for detail (and doesn't lag too much!).
