If 3 wins, will the player be able to choose between the two choices? I think I would like to see the larger display, with words, until I played enough to not need them, and just go with the symbols.
Me too. But the 'full' version take a lot of space too ... hm.

I like the small version of number 3 : good visibility of the indicators without taking too much place

Out of the options I voted #2. However, I wonder how #3 would look like with a slightly more transparent background

1 & 3 block the screen, where 2 allows us to see it. Perhaps if the background made it hard to see #2, I would vote for 1. But in your example, 2 works perfectly.
