I like both of those scenarios. (It would just be hard for me to not change the others at some point)

Wannabe girly and "woman should stay at home", but probably she would be pretty bad about following that. For example she could think that its her obligation to cook for the gaang (while sje is not actualy very good at it) - or when facing Kyoshi warriors she could say something like "Hey, we are woman, we are not suppused to do the fighting" with Suki replying "Ookay...so why the boomerang?" with fem Sokka trying to change the subject with "K-Katar was too young to use a boomerang!"

I'd go for single focus genderswap with minor mind altercations over time. Like Sokka is the only person changed, and everyone is aware of it (or Sokka's the only one aware of her original state and is resisting adapting to an alternate lifepath)

Would TG Sokka be like "Girls are naturally good at sewing, and guys are good at hunting and stuff. Naturally law of order." And try to be as girly as possible, or would he be a complete tomboy like Korra and just go against stereotypes whenever she got the chance? GIRL POWER!
