I've got 2 concepts, maybe they're not too terrible? I think a fun version could be a life-swap with Mario, like in SM64, instead of being Mario fighting Bowser, it swaps to Bowser in Mario's place. And the ending, when Peach is saved and bakes Mario a cake for his troubles, instead is Bowser in his place and he devours the cake Peach made and ends up as big and fat as the castle. Another idea I would have is to follow along with Bowser's Inside story and have Mario/Luigi fatten him up by changing his mentality on how much he wants to eat and how he loves getting fatter.
