In regards to the future stuff you guys are curious about: The whole ambiguous nature of what immortal was saying to mark about looking thin and being sick again was a direct foreshadow for people who already know how the comics turned out which was cool to see. Not spoiling anything for you guys but all will make sense in most likely season 4 when we finally get that next year :)

I feel like the reason they popped in these kinda episodes involving the future immortal and stuff is to challenge Mark's values cause it seems like he's more black and white since the season 2 finale. Now I feel like these are ment to push him to change or strain his beliefs
