I think the criticism on the name is mostly from the potential to get new listeners who aren’t already fans of the hosts from their streams. You want people to be able to get what the vibes of the pod are before clicking on an episode if they have no idea what the podcast is about. Like if you had zero clue who any of the people at the table were and you were just free scrolling YouTube trying to find something to watch and you came across one of the podcast episodes randomly, how likely would you be to click on it just based off channel name, thumbnail, and video title.

The "fear" in the title refers to the characters' sense of paranoia and anxiety in the face of the surreal and often dangerous world they inhabit. I imagine the &... refers to whatever guests are on and the topics they choose to bring up? HST popularised gonzo journalism, where the reporter often injects their own personality, opinions, and experiences into the narrative, creating a highly subjective account of events. This style of reporting is often used to cover events that are difficult to describe objectively. I imagine Hasan admires and relates to this style of reporting as it relates to streaming and thus landed on such a highly specific podcast name. This is purely my subjective opinion.
