You should look into the Casca book series by Barry Sadler. It is about an immortal and tells stories of him at various times through history.

I heard he was offered the role of Gandalf’s horse. Shadowfax was initially supposed to talk and Connery was tapped for the voice work because of Dragonheart. And I think with The Matrix he was supposed to be the voice of Trinity’s motorcycle.
