I'm in the middle of reading the Broken Earth books by NK Jemisin, and it offers some appropriate insight in what might happen if the moon really went away. This is a tremendously crappy world, plagued by such geological instability people have been unable to explore the seas; quakes, volcanoes and tsunamis reliably destroy cities all over the one continent, and that's when they don't cause mass extinction and civilization ending events, which has happened dozens of times over the 25000 or so years of known history. People have to live with hearts pre-hardened, ready at any moment to close down their cities with full martial law, chase outsiders away from their stone walls and kill off the weak and infertile in case they need to stretch their supplies a few hundred years cause they know in these events animal and plant life will start dying from acid rains and such. There are a class of people with basically earthbending powers who can reduce the disasters, but everyone's so wary of the Earth they traditionally kill these people on sight in case they accidentally start quakes. And as far as we're led to believe, all this is because the Moon is missing. Turns out, the Earth-Moon system has a delicate balance and upsetting it is astronomically catastrophic. Iroh tells the General he doesn't grasp the full repercussions of his plan, boy was that an understatement.

I personally believe that the reason Zuko was willing to save Zhao from the ocean spirit is because Aang saved his life twice (in Blue Spirit and this episode). Aang's mercy had an impact on him.
