I think none of actually realized that each mangekyo has different abilities when we watched it the first time. Can't expect her to predict a lot about Mangekyo when itachi is the one and only person we saw with it so far in these eps.

It's as simple as Sasori wanting to join his parents in the afterlife. Sasori as much as he denies it felt a lot of emotion fighting his grandmother and saw the change in her from the person who couldn't stand the leaf fighting beside one of theirs as an ally. Sasori also praised and acknowledged both Chiyo and Sakura's strengths so he thought what better person to send me to the afterlife than his own grandmother. Fighting Chiyo brought back all those memories of missing his parents he tried to deny and escape from all those years so him willingly giving up intel and walking directly into Chiyo's trap was his own form of showing his emotions as a shinobi very similar to Zabuza crying for Haku when he tried to downplay their relationship the whole battle.

Sasori hating to be kept waiting is definitely because he waited so long for his parents to return because of Chiyo kept lying to him instead of telling him the truth if she didn’t do that who knows maybe he wouldn’t become evil, yeah I know its hard to break the news that your parents are dead to the child, but sometimes you gotta make that hard decision.
