One possibility would be to delete the old safe or make a backup copy and then delete it so that you can create a new one with the older version.

I get the following message when I start the game and try to get to the main menu "Incompatible save game. This save game was created with a newer version of F1 2020. Please connect to Steam and make sure you have the latest version." Does anyone have a solution, because I can't create a save otherwise.

I'd suggest using cheat engine to get the address by hand. You can find the address selecting f1 in the top left corner and by searching for string entering {o:mixed}Carlos{/o}.

Yep! I thought it might be because I forgot to do it /before/ going to the Grand Prix menu so I started fresh a couple of times and same deal. Maybe it's to do with the Hockenheim mod?

Not that I know of, did you restart the name changer every time you started the game?

So the name changer worked the first time, but in the subsequent few times I've launched the game it won't apply. Is this a common issue?

FYI for all that have an issue with a massege that the game is an incompatible steam version after the start screen. This is because the F1_2020.exe and the F1_2020_dx12.exe are included in the download folder. Just remove them from the download folder and proceed the install as normal.
