I haven't watched the episode in a while but I believe that Sawyer didn't know because Wulfric didn't used it the first battle so I'm assuming he only pulls the mega stone out for rare moments where the challenger is just that strong

I love the lesson ash had to learn. He said it himself. He was on a losing streak. And because of that, he became too focused on winning and getting stronger. He stopped having fun and stopped thinking about working with his Pokémon. I love how Serena was the one to remind him of that. for the leagues the champions can’t battle in them but whoever wins the league has a chance to battle the champion for the title

The reason why Wulfric's battle is so iconic is because this is technically Ash's LAST GYM BATTLE in the entire pokemon anime. That is because in the next two generations ( Sun and Moon, and Journeys) Ash doesn't do any gym battles because there are no gym battles needed as there are other ways he makes it to the league in those regions.
