Really it picked up in season 2, when the writers learned about the fandom and started deliberately adding background pony scenes in for us.

Agreeing with Lord451 here. It'd be fun to see if you pick up on the hidden side-stories, like Lyra and BonBon's relationship or The Doctor and Link being in-universe. The early seasons won't have a lot, but it picks up in s3. Many of the background characters are living their own lives and doing their own thing. It's not some Gravity Falls level B-Plot but there are recurring characters who seem to benefit from the Mane Six, like the spa ponies

The series has a ton of stuff going on in those freeze frame background pictures. There's a fan ship that became canon that happens almost entirely in the background, and later on they encounter a villain who becomes a returning villain later. They have a convoluted plan to do their thing that requires a lot of personal info on the characters, and there are numerous places throughout that season you can spot signs or hints of that character in the background spying on them. It's pretty neat.
