At this point he should give the horses a day of rest, send one more convoy with a return of only three wagons (merchant to stay in city) and start building sleds for snow travel.

It's like you said. Medieval cooks wouldn't waste anything - including the whey, especially in conditions where there is a food shortage. You can certainly assume that here they would be using everything that is edible in one way or another, but writing every single such thing in the story (eg the type of cheese) would make it unnecessarily complex, so I have skipped whatever can be implicitly understood for a story set in the medieval era. There are only a couple of cows, so the amount of cheese (which would have been made a few months ago, usually to prepare/preserve food for the winter) is small enough that even the baron of the village can be provided cheese only occasionally. Kivamus is sharing that with all those who live in the manor house (not the whole manor), but they can still get it only once in a week or even less often. They certainly don't have enough of it to feed the whole village.

Hi, I like the inclusion of cheese, but I’m wondering what type of cheese it is, as nearly all cheese requires a minimum of 3 months to age, (the few exceptions that I think of are mozzarella and cheeses like ricotta which can be made and eaten quickly but don’t have much shelf life unless you have refrigeration) but if you use an aged cheese (which can basically last years if done right) but that would mean that it had to been started to be made long before the baron arrived, which is not inconceivable as they forsaw it and started to make it to prepare for the winter, however from what I understand there’s only a handful of cows, so they certainly wouldn’t have enough to feed the village with it, but you could make it a treat for the children only, to help slow malnutrition which can stunt a child’s growth which seems to be what happened to Timmy, also if the cheese is still being made the Whey which is the byproduct of making cheese should be added to the grain porridge that they serve as the whey is high in protein (body builder today use whey (powder) in their protein smoothies and stuff), however I can also imagine that the old cooks from an medieval period would probably would not waste anything however they may not know about the protein part of whey, whey isn’t tasty by itself but it’s basically flavourless so can easily be added as a base to any meal that requires water, ie soups, stews, bread (in the mixing of dough) and porridge.
