It’s basically just done according to Matt and I having time and quiet space to record. We both have young kids and families so evening times at home isn’t great for recording. I can do late night but Matt gets too sleepy!

Yeah, same for me here in Amsterdam (3am) Perhaps they can do this one for the people in the US, but do the next one in the JST/ Australia evening, so it's morning in Europe and ungodly in the US? But my guess is that there's many more US listeners than European ones.
