I don't think there is any symbolism behind having the mothers dying for some characters. It's just a weird recuring hero trope, in japanime/manga, where the hero(s) always lose their parents. The more, you'll watch anime or read manga, the more you'll see that trope. It's as much 'funny' as "truck-kun" when a car accident happens in anime/manga.
