Food scientist- consistency is one of the most difficult things to achieve in large scale. Just from the meat, each cow can have a unique marbling, so that can mess up fat% in a patty. That can throw off time and temperature for cooking to safety. Wheat for bread. Weather patterns are unpredictable. You can adjust the flour later but for things like a mass produced bun you need a consistent grain to be able to pump out the same buns at scale. Tbh if he went the way of in and out he’d be able to maintain his standards but at a slower rate of growth.
