Ashton Park is clearly Laguna Seca. Bayshore could be one of Sonoma's shorter configurations, though it could be a vague version of long beach. Playland is Mid Ohio Ha, "USA Raceway" is Road America I can't identify Twin Peaks but I'm pretty sure it's a real layout, and the timeline works out that they based that name on the show.

I really like these videos. Concerning other games for this series: How about the Grand Prix games by Geoff Crammond. I remember that I played Grand Prix 2 back in the day. Grand Prix Legends could also be interesting. This is game that simulates the 1967 F1 season.
