After weeks of prompt tinkering and building generic monster templates for each and every CR level I've finally finished a Monster Statblock Generator I feel confident enough about to share: https://cros.land/ai-powered-dnd-5e-monster-statblock-generator/
It's still a bit rough around the edges but I think it mostly does the job well. A GM may need to make a few tweaks here and there but it seems serviceable to me. If you run into any issues or have any feedback please let me know!

This is pretty great but an issue I've run into is that it has started refusing to include any to hit values in it's attacks. It's not a huge issue, and they were usually wrong anyway, but it was nice to not have to calculate those if the monster was done on the fly. Not even sure how you would address that, but I thought I'd let you know. Edit: This is a bigger issue in the lower CR ranges I've found.

Thanks for adding the JSON feature! I used it last night to create two new myconids for my game. This is for sure going to be super handy for the rest of my campaign.
