Lana explains that the Bovine DNA she used to help stimulate Ethan's milk growth mutated and became the dominant gene which is what triggered Ethan's changes. Maybe it's his environment too that caused the changes given he's around cows all the time too.
Either way Ethan reassures her that he actually likes that he can now communicate with the cows to make them happy!
