I think you answered your own question. Sometimes I doesn't matter if you did everything right. True love is a deep, carnal instinct. Though it doesn't excuse it, it transcends commonplace morality. It doesn't matter how good things are with who you've got. When you know, you know. Now, what you choose to do with that and how you go about it... That's the part I agree is being haphazardly, selfishly botched here... But they're young, stupid, and their adolescent willpower has been near-razed by the consecutive string of traumas they've been enduring. They're still kids. We're watching them learn how to be good people, the way you and I learned. But that's not an excuse, of course - They'll very very likely face consequences for this, and hopefully learn from them.

I'm struggling here, because I was rooting for Joe and Joyce long before they got together. And freaked out how, by kissing one time, they realize they have to break up with the guys without even explicitly saying it. I thought when they were going to "tell them" I thought it was, "tell them we made a mistake before they hear about it from someone else," not "tell them we're breaking up." I like these two together, but it seems mean to Joe who has been so patient. And Joyce was really into him... how can she drop him so easily?
