I've felt like i was actually in that kitchen crossing fingers for a good result. And I don't even like ginger...

Watching you kneading the dough... kinda reminds me of how the "Grannies" bring together dough for pasta. (Channel on You Tube is called "Pasta Grannies"). This cake dough has leavening and butter in it.... but the concept seems similar. More flour than liquid brought together with kneading thing. The butter fat would break up the gluten where in pasta it is only eggs to activate the gluten. As for flavor.... I don't recall any salt ???? I may have missed that. And did they use spices as liberally back then? It may have been enough ginger and nutmeg for their tastes at that time. Good luck messing with the recipe.

I can't believe you didn't put the full nutmeg in....Lol, maybe on the full production version.

This is great! It is very interesting to see how you do the background work to prep for a cooking video. Thanks for sharing it and I love seeing the German kitchen "set"!

I love long form/video essay type content! If it isnβt too much of a burden, I would love to see more!

Thanks for taking us "Back Stage" with you! Seeing the kitchen as a set was such a cool peek behind the curtain. I loved watching you work through the creative process. I agree the a live stream cooking episode would be so much fun!
RG de Stolfe
This was great! I like cooking anyway, Iβve been experimenting with some turn of the century recipes myself doing much of the same type of reasoning and adjusting of the recipes. I keep thinking with some of these cooking episodes that I hope you have a sink with running water in the set!
George Page (Jaji)
Thanks, Jon!
Vicki Stevens

The German Kitchen set is wonderful. Thank you for going through the prep for a cooking video. It's helpful to see how you work out what isn't specified in the recipe. I'm ready to make this recipe (as soon as I replace my out-of-date ginger).

Also yes a live cook would be fantastic! Even if it took 3 hours, Id sit through the entire thing!
Matthew H
This was fantastic! I was wondering how a 4lb cake could cook in 15 minutes, but then you rolled it out. These look good! The ginger overpowered the nutmeg though sounds like, so maybe a whole nutmeg is to be used?

So fun! Thanks!
