"Plug Me In" process

not all the time, but in this case, yes. once you paint something in grayscale you can then use the "gradient map" tool in the Image > Adjustments menu to selectively colorize your tones.

The third image, the one in grey scale, the 'tones' layer; is this what you do before you color it in?
